Yeasts are one of the oldest organisms on the planet and are good models for understanding all kinds of life. When yeasts feed on sugar, they produce alcohol in a process known as fermentation. This has been used for centuries to make alcoholic beverages. The great genetic variation in yeasts, that has evolved throughout thousands of years, is currently under investigation by scientists at Lund University. It has also awoken the interest of the wine and beer industry.]]></description>
